  • 12 slices bacon, cut in half lenthwise
  • 24 large scallops
  • 2 Tablespoons butter, melted
  • 1/2 teaspoon minced garlic
  • 1/8 teaspoon salt
  • 1/4 teaspoon black pepper
  • 24 toothpicks

  • 1/2 cup Dijon mustard
  • 2 Tablespoons honey
  • 2 Tablespoons cider vinegar
  • 2 Tablespoons light brown sugar
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon black pepper

  1. Preheat oven to 375°F. Line a baking sheet with aluminum foil and spray the foil with cooking spray.
  2. Wrap a strip of bacon around each scallop, inserting a toothpick all the way through the scallop to secure the ends.
  3. In a small bowl, combine butter and garlic. Dip each scallop in butter, place on prepared baking sheet and sprinkle with salt and pepper.
  4. Bake on the middle rack for about 15 minutes, or until the scallops are cooked through and bacon is crisp.
  5. While scallops are baking, combine all ingredients for sauce in a medium bowl, mixing until well combined and refrigerate until ready to serve. Or make sauce ahead of time and chill until ready to serve.
