Makes 4 servings, 1/2 cup each


  • 2 cups shredded carrots
  • 1/2 cup finely chopped celery
  • 1 Tablespoon minced shallot
  • 2 Tablespoons olive oil
  • 2 Tablespoon lemon juice
  • 1 Tablespoon honey

  1. In a medium bowl, combine carrots, celery and shallot.
  2. In a small bowl, whisk together oil, lemon juice and honey and pour over carrots.
  3. Toss to combine. Refrigerate until ready to serve.
