Cumin Roasted Sweet Potatoes

  • 2 ½ lbs sweet potatoes, peeled and cut into chunks
  • 1 Tablespoon canola oil
  • 1 teaspoon ground cumin
  • 1 ½ teaspoons ground black pepper
  • 2 Tablespoons maple syrup

  1. Preheat oven to 400°F.
  2. Line a large baking sheet with aluminum foil.
  3. In a large bowl, toss the sweet potatoes with oil, cumin and pepper until the potatoes are well coated.
  4. Arrange the sweet potatoes in a single layer on the lined baking sheet.
  5. Bake for 20 minutes, remove from oven and drizzle the sweet potatoes with maple syrup. Use a spatula to turn potatoes and coat them evenly with the maple syrup.
  6. Return to oven and bake for another 20 minutes.
