  • 1 cup Panko crumbs
  • 1/2 cup Parmesan cheese
  • 2 large eggs
  • 6 boneless pork chops, 1/3 inch thick, 4 oz. each
  • salt and pepper to taste
  • 1/4 cup plus 2 Tablespoon olive oil
  • 6 lemon wedges for garnish

  1. Preheat oven to 200°F.
  2. Mix Panko and Parmesan cheese in a bowl.
  3. Beat eggs in a separate bowl.
  4. Season pork with salt and pepper.
  5. Dip pork in eggs allowing excess to drop off. Dredge pork in Panko/cheese mixture.
  6. Heat 1/4 cup oil in a large skillet over medium-high heat. Add 3 pork chops and cook on both sides until golden.
  7. Add remaining oil to pan. Cook 3 remaining pork chops until golden on both sides.
  8. Keep pork in oven until ready to serve. Garnish with lemon wedges on a platter.
  9. Suggestion: Serve with a side salad and side of pasta or rice.
