  • 2 cups peeled, seeded and diced watermelon
  • 1/2 cup seeded and chopped English cucumber
  • 1/4 cup minced red onion
  • 1 jalapeno pepper, seeded and minced
  • 1/4 cup minced fresh cilantro
  • Juice of 2 limes
  • Freshly ground pepper, optional
  • Pinch of salt, optional

  1. In a large bowl, combine watermelon, cucumber, onion and pepper.
  2. Add cilantro, lime juice, freshly ground pepper and salt (if desired).
