wild rice with bacon and onion

- 1 cup uncooked wild rice or wild rice blend
- 3 cups water
- 4 slices bacon, diced
- 1/2 cup chopped onion
- 1 stalk celery, sliced
- 1/8 tsp pepper
- 1/2 tsp parsley flakes
- 1/4 tsp salt

- Place rice and water in a heavy saucepan and bring to a boil. Reduce heat to simmer; cook 45 minutes or until tender. Uncover and fluff with a fork.
- While rice is cooking, fry bacon in a skillet until crisp and drain on a paper towel. Wipe skillet with another paper towel, leaving a small amount of grease.
- Saute onion and celery until tender. Add onion and celery to rice. Stir in pepper, parsley and cooked bacon just before serving.
