  • 1 cup uncooked wild rice or wild rice blend
  • 3 cups water
  • 4 slices bacon, diced
  • 1/2 cup chopped onion
  • 1 stalk celery, sliced
  • 1/8 tsp pepper
  • 1/2 tsp parsley flakes
  • 1/4 tsp salt

  1. Place rice and water in a heavy saucepan and bring to a boil. Reduce heat to simmer; cook 45 minutes or until tender. Uncover and fluff with a fork.
  2. While rice is cooking, fry bacon in a skillet until crisp and drain on a paper towel. Wipe skillet with another paper towel, leaving a small amount of grease.
  3. Saute onion and celery until tender. Add onion and celery to rice. Stir in pepper, parsley and cooked bacon just before serving.
