You will need: 1 egg. 1/4 cup + 2 tablespoons milk. 1/4 cup butter, melted & cooled. Instructions - makes 7 muffins. 1. Preheat oven to 400 degrees F. Line 7 muffin cups with paper liners or coat each with non-stick spray. 2. In a medium bowl, whisk together egg, milk and butter until well-blended. Stir in muffin mix just until dry ingredients are moistened (batter will be lumpy). 3. Scoop batter evenly into muffin cups, filling each 3/4 full. 4. Bake 14-16 minutes, or until tops are light golden brown and spring back when lightly touched with fingertip. Carefully turn hot muffins onto wire rack. Serve muffins warm, if desired. Variation - adding chocolate chips: Sprinkle extra chocolate chips on top of muffins before baking.
