Fast rise yeast is finer, so it can be added to bread recipes without proofing in warm water first. If you do wish to proof to test for freshness, just stir yeast and 1/4 tsp. sugar into 1/4 cup warm water (95-110 degrees F). Mixture should bubble within 5 minutes. (If not, discard and start again.) Add to recipe as directed and deduct 1/4 cup from recipe's total liquid. This product is not ready to eat, If must be thoroughly cooked. Store in a cool, dry place. Remove top portion at preformation for display.
