Tips for Using Coconut Flour: Baked goods made with coconut flour are light and soft, with rich textures. Coconut flour can be substituted for up to 20% of the wheat flour in a recipe. Many gluten-free recipes use it as a base, including for coconut flour bread, pancakes, cakes, muffins and crepes. Baking 1/4 cup of coconut flour = 1 ounce. When measuring coconut flour, it can yield less due to the fluffy nature. Also note, coconut flour absorbs more water than wheat flour, so add an equal portion of water or other liquid in relation to the amount of coconut flour used. Store dry and out of sunlight in a sealed container. Stable up to one year if stored as directed.
