You will need: 3/4 cup plain yogurt. 1 pkg. chicken biryani seasoning mix. 2 tbsp. oil. 1 medium onion, thinly sliced. 1 lb. chicken breasts, cut into 1-inch cubes. 1 medium tomato, chopped. 6 cups water. 1 cup basmati rice. 1/4 cup cashew halves. 1/4 cup raisins. 2 tbsp. butter, melted. Directions: Prep time: 10 minutes. Cook time: 35 minutes. 1. Mix yogurt and seasoning mix; set aside. Heat oil in large skillet on medium heat. Add onion; cook and stir 3 minutes. Stir in chicken, tomato and yogurt mixture. Bring to boil. Reduce heat to low; cover and simmer 10 minutes. 2. Bring water to boil in medium saucepan on medium-high heat. Add rice; return to boil. Boil 5 minutes. Drain rice with strainer, discarding liquid. 3. Spoon rice on top of chicken mixture. Sprinkle with cashews and raisins. Drizzle with butter. Cover with tight fitting lid. Cook on low heat 15 minutes or until rice is tender. Let stand 5 minutes. Makes 6 servings.
