(1) Cut chicken into 1/2-inch strips; lightly coat with seasoning mix in shallow dish. (2) Heat oil in 10 inch nonstick skillet over medium-high heat. Carefully add chicken. Cook 5 to 8 minutes, stirring occasionally, until coating is browned and centers of chicken strips are no longer pink and thoroughly cooked (165 degrees F). Refrigerate leftovers. For Fish: You Will Need: 1 lb Tilapia or other thin white fish fillets and 1 tablespoon vegetable oil. (1) Cut fillets into 2 inch sections; lightly coat with seasoning mix in shallow dish. (2) Heat oil in 10 inches nonstick skillet over medium heat. Working in batches, carefully add several pieces of fish. Cook 5 to 8 minutes, turning occasionally, until coating is browned, fish flakes easily and centers are thoroughly cooked (145 degrees F). Continue until all pieces are cooked. Refrigerate leftovers.
