Preparation Instructions: 1. Place wrapper into warm water until it is soft and pliable (about 10-15 seconds). 2. Remove and blot on a damp tea towel. 3. Place the filling in the middle of the wrapper. 4. Fold over the bottom and sides. 5. Roll wrapper upwards to form a neat roll shape. Serve immediately or deep-fry for about 2 minutes. 4 Fresh Spring Rolls (Serves 2): 4 Blue Dragon Spring Roll Wrappers; 1/4 cup rice noodles; 1/2 cup chopped lettuce leaves; 1 Grated carrot.12 medium sized cooked shrimp; a handful of mint and/or cilantro. Method: (1) Cook the rice noodles & prepare the Spring Roll Wrappers (see above). (2) Divide the shrimp, lettuce leaves, noodles, carrots and herbs between the wrappers. (3) Fold wrappers according to instructions above. Other filling ideas to try: cucumbers, bean sprouts & avocado.
