Cook thoroughly to: 165.0°F for safety. Keep refrigerated. Storing: Fresh turkey should be refrigerated at 35°F-40°F. The lower temperature is preferred. Cook as soon as possible (no later than the use by date) to ensure maximum freshness. If you are not confident about the temperature of your refrigerator, cook or freeze the turkey within 4 days of purchase. Prepare: 1. Remove outer plastic netting and wrapper. 2. Drain juices and pat roast with paper towels (not necessary if frozen). 3. Brush roast lightly with vegetable oil or spray with non-stick cooking spray. Additional basting is not necessary. 4. Stuff turkey breast just before roasting, if desired. Lightly fill rib and neck cavities and cover exposed stuffing with foil. To roast: 1. Preheat oven to 325°F. 2. Place prepared roast, skin side up, on flat roasting rack in 2" deep open roasting pan. 3. Roast uncovered per guidelines below and to a minimum internal temperature of 165˚ in center. Roasting times will vary if covered or placed under oven cooling bar. 4. Let breast stand 10 minutes before carving. Weights (LBS) Approximate Cooking Times. 3 to 5 1/2 LBS. Unstuffed 2 - 2 1/2 Hours. Stuffed 2 1/4 - 2 3/4 Hours. 5 1/2 to 9 LBS. Unstuffed 2 1/2 - 3 Hours. Stuffed 3 1/2 - 4 1/2 Hours.
