Since 1886 we select the best durum wheat produced in Italy and in the rest of the world and we sue the best Italian spinach leaves to guarantee a pasta with unique qualities and superior cooking performance. 2. Before being milled and kneaded, our durum wheat and spinach leave must pass strict quality controls in our quality assurance laboratories. 3. We use “coarse” durum wheat semolina to preserve the gluten integrity. 4. We knead the “coarse” the durum wheat semolina with water and tender spinach leaves to obtain a signature pasta with a distinctive taste of spinach. 5. We use bronze drawplates to create a rough surface on the pasta to better retain sauce. 6. We dry our pasta slowly at low temperature to preserve the flavor of our wheat. Suggestion for a perfect cooking. Use 4.5 quarters of water per 12 oz of pasta. Bring water to a boil. Add salt to taste. Add pasta to boiling water. Stir form time to time. 4.5 Qt. 100° F salt. 10’-12’ Pasta 12 oz. Cooking time: 10-12 min.
