Quick tips. Shrimp rice salad: combine 3 cups cooked rice with 2 cans (4-1/2 ounce) shrimp drained, 1/2 cup chopped celery, 1/2 cup chopped green onion, 3/4 cup sour cream and 1 packet instant chicken broth. Garnish with fresh lemons. Chill. Pretty parfait: in parfait glasses, spoon alternate layers of cooled, cooked rice and canned pie filling - cherry, blueberry, peach or apricot. Garnish with whipped topping. Italian medley: combine cooked asparagus tips, toasted pine nuts, red and yellow peppers with hot cooked rice. Top with Parmesan cheese. Meatless main: combine hot cooked rice with garbanzo beans, shredded carrots, ripe olives, parsley, ricotta or farmer cheese. Top with tomato chili sauce. Cilantro cheese rice: top hot cooked rice with diced tomatoes, green onions, Monterey Jack cheese, cilantro, and sprinkle with Parmesan cheese. Cooking directions on the stove: 1. In a saucepan, bring water to a boil.* 2. Stir in rice.** 3. Cover. Reduce heat and simmer for 20 minutes or until all water is absorbed. *Cooking measurement chart: Rice: 1 cup - 2 cups - 3 cups. Water: 2 cups - 4 cups - 6 cups. Makes: 3 cups - 6 cups - 9 cups. Servings (3/4 cups cooked): 4 cups - 8 cups - 12 cups. ** Add 1 tbsp. butter and 1 tsp. salt per cup of uncooked rice, if desired. For drier rice use 1/4 cup less water. For moister rice, use 1/4 cup more water. Cooking directions in the microwave***. 1. In a 2 quart microwave-safe dish combine 2 cups water and 1 cup rice.** 2. Cover and microwave on high for 5 minutes. Reduce setting to 50% power, microwave for 15 minutes.
