Keep frozen. Quick thawing: Place Geisha shrimp in colander and rinse with cold running water for approximately five minutes until Geisha shrimp are thawed. Drain for three minutes before cooking. Thawing instructions: 1. Put frozen Geisha shrimp into a colander or strainer, place in a pan and cover with aluminum foil and refrigerate for 8 to 10 hours. 2. When thawed, rinse them lightly under cold water and drain for 2 to 3 minutes before cooking. Cooking instructions: To microwave: Place thawed Geisha shrimp in a single layer in a microwave-safe dish and cover with plastic wrap. Cook in microwave on high for 1 minute for each 4 oz. To boil: Using 1 quart of water for every 4 ounces of Geisha shrimp, (6 quarts with entire 32 oz. package). Add salt and/or celery to the water. Bring water to a boil before adding Geisha shrimp. Simmer for 2 to 3 minutes. Geisha shrimp cooks quickly and toughens with overcooking. So immediately drain hot water from pan and cover Geisha shrimp with cold water. To saute: Melt butter in a skillet. Add thawed Geisha shrimp, and saute for 5 to 6 minutes with seasoning and/or wine. If using wine, add only during the last minute. To grill: Marinate and/or add seasoning to thawed Geisha shrimp. Place on hot grill for 4 to 5 minutes and serve immediately.
