Follow this recipe for a delicious tiramisu – serves 6 refrigerate for several hours before serving. 7 OZ sclafani lady fingers (24), 3 egg yolks, 1 egg white, 3 tbsp fine sugar, 1/3 cup cream, 8 oz mascarpone cheese, 1 1/3 cup sweet dessert white wine (Optional), 1 ½ cup (4fl.oz) espresso coffee, 4 tbsp unsweetened cocoa powder. Make a zabaglione by beating the egg yolks and sugar in the top of a double boiler until ivory colored. Add 1/3 cup (3 fl.oz) sweet dessert white wine and whisk over gently simmering water until the mixture begins to thicken. Let cool. Stir half of the espresso coffee into the mascarpone. Beat the egg white until stiff and mix it with the zabaglione until you get a creamy texture. Mix the remaining espresso coffee with the sweet dessert white wine and dip (one at time) the 24 sclafani lady fingers into it. Arrange layer at the bottom of a serving dish. Cover them with half the mascarpone, then half dessert white wine. Repeat the layer finishing with whipped cream covered with cocoa.
