Makes about 4 servings Ingredients: 12oz boneless chicken breasts (about 2), cut in 1/2 inch thick strips, 1 tbsp soy sauce, 1- 1/2 cups chicken stock 2 tbsp corn starch 1 tbsp canola oil 1 small onion thinly sliced 1 sweet red pepper sliced 1 carrot diagonally sliced. Preparation Instructions: In bowl stir together chicken and soy sauce. Whisk together chicken stock and corn starch. In a large non-stick skillet, heat oil over medium-high heat; cook chicken mixture for 2 minutes, stirring or until chicken turns white. Transfer chicken to a plate. Re-stir broth mixture; add to skillet with onions, peppers and carrots. Cook, stirring for 2-3 minutes or until vegetables start to soften and sauce is bubbling. Stir in chicken; cook for 2-3 minutes or until chicken is cooked through. Serve over rice in chicken broth is desired. Microwave: Do not microwave in container, empty contents of container into a microwave-safe bowl. Microwave on high for about 3 minutes, or until hot. Let stand in microwave for one minute, then stir. Stove top: empty contents of container into a saucepan. Heat over medium heat until hot, stirring occasionally. Caution: product and container will be hot. Use potholders to avoid injury. Promptly refrigerate any unused portion in a separate container. Refrigerate after opening. Easy to open cap-no pull tab! Twist to break inner seal and tamper-evident ring. Use within 10 days after opening.
