Store in a cool, dry place. Basic prep: Carefully sort beans and rinse thoroughly. Soak beans overnight. Rinse and place in a large pot. Cover with fresh water. Bring to a boil for 10 minutes, reduce heat and simmer, covered, until tender, 1 to 1-1/2 hours. Makes 2-1/2 cups cooked.
